Shahi Chicken Curry - The aromatic full of flavors Shahi chicken curry. The curry is made with royal ingredients like green cardamom, khoya and almonds, its not called "Shahi" for nothing.

Ingredients

  • Chicken (cut into small pieces) 1
  • Green cardamoms 3
  • Peppercorns 6
  • Bay leaves 2
  • Small cinnamon sticks 2
  • Curd 1, 1/2 cup
  • Khoya 50 gm
  • Almonds (blanched and coarsely ground) 12
  • Kewra essence (optional) 1/2 tsp
  • Salt to taste
  • Oil as needed
  • Grind Together:
  • Cumin seeds and coriander seeds 1 tsp each
  • Red chillies 2
  • Turmeric 1/2 tsp
  • Ginger 1" piece
  • Cloves of garlic 4
  • Onions 3
  • Medium tomatoes 2

Cooking Directions

  1. Heat 3 tbsp oil, add the ground spices and cook till golden brown in colour.

  2. Then add the chicken pieces and other ingredients except for the curd, khoya and almonds.

  3. Add salt and keep stirring till the chicken is fried with the spices.

  4. Add water to the chicken and cook till it becomes tender.

  5. Lastly, add curd, khoya and almonds and cook till gravy is creamy.

  6. Sprinkle a few drops of kewra essence before serving if preferred.
