Ingredients

  • Tomatoes 4 - 5 (sliced)
  • Potatoes ½ kg (sliced)
  • Olive oil to drizzle
  • Salt and black pepper to taste
  • Fish fillets 4
  • Lemon 1 (sliced)
  • Capers 4 – 6
  • Mayonnaise 1 cup
  • Parsley as required chopped
  • Lemon juice 1 tsp

Cooking Directions

  1. In a baking dish place slices of tomatoes, potatoes, drizzle with olive oil, season with salt and pepper.

  2. Roast for 20 minutes till tender.

  3. Then add fish, top with lemon slices and a few capers, bake till fish is done.

  4. Mix mayonnaise with parsley, lemon juice and remaining capers in a bowl and season with salt and pepper.

  5. Serve with fish.
