Spicy Ladyfingers is cooked in very few ingredients, where tomatoes play a key role in minimizing the "slime" factor. It is a perfect vegetarian meal served with rice and lentils or beans, but it's also great alongside grilled meats.

Ingredients

  • Ladyfingers ½ kg (sliced)
  • Onions 3 sliced
  • Tomatoes 3 sliced
  • Green chilies 4 (split open)
  • Khatai powder 2 tbsp
  • Fresh coriander 2 tbsp
  • Oil 1 cup
  • Turmeric powder 1 tsp
  • Ginger garlic paste 1 tbsp
  • Red chili flakes 1 tbsp
  • White cumin ½ tbsp
  • Salt to taste

Cooking Directions

  1. Heat oil in a pan and fry sliced onion till golden.

  2. Add ginger garlic paste, salt, tomatoes, turmeric, red chili flakes and cumin, stir and then cover lid so that tomatoes softened.

  3. Now add ladyfingers and khatai, allow simmering for 10 minutes.

  4. Garnish coriander, green chilies and serve.
