This is basically a cold mango soup. It is served with a typical Indian meal and is a refreshing way to cool one's palate when eating a spicy curry. Use mangoes that are soft to the touch and smell fruity.

  • 6 mangoes, very ripe
  • 1/2 cup whole milk

Cooking Directions

  1. Cut the mangoes into big lengthwise pieces and peel.

  2. Either press each piece through a strainer held over a large bowl to catch the pulp and juice, and discard the fiber, or process the mango chunks in a blender and strain into a medium bowl, discarding any fiber.

  3. In a medium bowl, combine the mango pulp and milk, stirring until thoroughly combined.

  4. May be made a day in advance, covered and refrigerated; may be kept frozen for a month.

  5. Serve cold in bowls.
