Home style chicken noodle soup that really makes a wonderful side or meal, it cures what ails you. If you like lots of noodles use a whole pound of them. Serve hot with your favorite salad and bread. This freezes or doubles well. Recipe of cooking expert Sharmeen.

Ingredients

  • Chicken Stock 6 cups
  • Noodles boiled and drained 200 gms
  • Shitake mushrooms 4 soaked in 1/4 cup hot water
  • Carrots 1 chopped in strips
  • Cabbage 1/4 cut into strips
  • Sugar Snap Peas handful
  • Green Onion 1 cut in strips
  • Dark Brown sugar 1 tsp
  • Soy sauce 2 tbsps
  • Salt to taste
  • Crushed black pepper to taste
  • White Pepper to taste
  • Corriander Leaves 2 tbsp fresh
  • Ginger 1/2 tsp grated

Cooking Directions

  1. In a saucepan boil the stock, soy sauce, sugar, ginger,

  2. Now add 2 tbsps soaking water from the mushrooms and seasoning.

  3. Then add the vegetables and cook for a minute or 2 then add noodles.

  4. Garnish with corriander leaves and serve.
