Ingredients

  • Tender lady’s fingers 1 lb
  • Onions 4 medium
  • Garlic cloves 6
  • Turmeric powder 1/4 tsp
  • Salt and red chilies to taste
  • Curd or yogurt 1/4 pint
  • Ghee 8 tbsp
  • Garam masala 1 tsp
  • Coriander leaves

Cooking Directions

  1. Wash the lady’s fingers and dry on a clean towel.

  2. Cut off the top part with a sharp knife.

  3. Then heat some ghee in a frying pan and fry the lady’s fingers to a light brown and set aside.

  4. Grind onions and garlic to a thin paste.

  5. Heat the rest of the ghee in a heavy bottomed saucepan and fry this paste, then add salt, turmeric powder, garam masala and chili powder.

  6. Keep adding a little water from time to time to prevent the spices from sticking to the bottom of the saucepan.

  7. Finally, add the curd and stir continuously.

  8. When ghee separates from the spices put in 1 1/2 pints water and let simmer for about 1/2 hour.

  9. Then add the fried lady’s fingers to this gravy and let simmer for another 15 minutes.

  10. Just before serving, sprinkle with garam masala and garnish with coriander leaves.
