Kalakand, or Qalaqand is a popular Indian and Pakistani sweet made out of solidified, sweetened milk and ricotta cheese.

  • Condensed Milk 400 grams
  • Cottage Cheese 1/2 kg
  • Milk Powder 4 tbsp
  • Small Cardamom(ground) 1 tsp
  • Cooking Oil 2 tbsp
  • Garnish:
  • Almond Silvers

Cooking Directions

  1. Crush cottage cheese with a fork and mix well with milk powder.

  2. Slowly pour condensed milk and stir well to make a soft paste.

  3. In a heavy based pot, add 1 tablespoon of Cooking Oil and the paste.

  4. Mix well Add ground cardamom and cook on medium heat for 8-10 minutes, strring continously.

  5. Brush 1 tablespoon of Cooking Oil on a tray and dish out the kalakand.

  6. Cool completely befor cutting into pieces Garnish with almond slivers and serve.

  7. Tip: Cottage cheese can easily be made at home.

  8. Heat 1 litre milk in a pot and when it comes to a boil, add 2 tablespoons of lemon juice.

  9. Boil for 2-3 minutes nad remove from heat.

  10. Add 1 cup ice cold water and keep aside for 5 minutes.

  11. Invert the pot over a flour sifter and drain the water completely by pressing with a wooden spoon.

  12. Cottage cheese is ready.

  13. Note: Pheeka khoya may be used as a substitute for cottage cheese.
