Fabulous and fun. A great alternative to meat kebabs. These Kebabs are made from sweet potato wih cashew nuts to give it great flavourings. Try this wonderful meatless kebab recipe for Ramadan, or any buffet party.

Ingredients

  • Cashew nuts 4 tbsp
  • Gram flour 100 g
  • Sweet potatoes, boiled, peeled and grated 300 g
  • Paneer, grated 100 g
  • Fresh ginger, peeled and grated 1 tbsp
  • Small handful of mint leaves, chopped
  • Shavings of nutmeg few
  • Salt and pepper
  • Lemon juice to drizzle on top
  • Wooden skewers

Cooking Directions

  1. Dry roast the cashew nuts in a small pan.

  2. When they turn golden, remove and reserve.

  3. In same pan, dry-roast the gram flour.

  4. Keep stirring to prevent it from sticking.

  5. When the raw aroma has transformed into a cooked aroma, in about 6-7 minutes, remove and reserve.

  6. Preheat the oven to 220 degree C.

  7. Combine the sweet potatoes, paneer, ginger, mint, leaves, nutmeg, cashew nuts and the seasoning.

  8. Add the gram flour and knead well with your fingers until dough is formed.

  9. Divide the dough into 8 portions and shape around wooden skewers.

  10. Reduce the oven temprature to 180 degree C.

  11. Place the skewers on a lined baking tray and bake for 20 minutes until golden.

  12. Serve hot, drizzled with lemon juice.
