Blanch and slice the nuts.
Roast the saffron and crush to a powder.
Whip the eggs well for 10 minutes, till frothy.
Add the sugar and saffron and whip for another 5 minutes.
Heat ghee in a saucepan and fry the cardamoms for a minute, then remove from heat and allow to cool.
Add the egg and raisins and cook, stirring gently, until the ghee begins to separate.
Add vanilla essence, stir and remove from heat.
Turn out in a flat thali or dish and spread evenly.
Sprinkle with nuts and allow to cool and set.
Cut into squares and serve.
