  12. Shahi Korma by Chef Zakir Heat 4 tbsp ghee and 2 tbsp butter in a pan. Add 2tbsp ginger and 2tbsp garlic paste (saute it) Add 1/2 kg mutton pieces and cook (bhoona) When meat is lightly colored add: 2-3 dal chini (cinnamon sticks) 3-4 bari elachi (black cardamom) 6-8 loongh (cloves) 4-6 choti elachi (green cardamom) 2 tazpat ka pata (bay leaf) 4-6 kali mirch (whole peppercorns) pinch of zeera (cumin seeds) In another pan fry 2 medium size onions in 2 cups Oil to a crispy golden brown color and crush them. Take 50gms almonds (boiled and skin removed) and 1/2 cup milk, grind together to a paste. Add 250 gms Yogurt (1/2 cup) and almond paste to meat. Add 5-6 green chillies (lengthwise cut) Add salt to taste. Pinch of saffron and a little water. Cook on slow heat till meat is tender. Add crushed onions 2-3 khoya 4tbsp fresh cream Cover and cook on hi-med flame for 5-7mins Haryali Biryani by Chef Zakir In 1 cup ghee add 2-3 dal chini (cinnamon sticks) 3-4 bari elachi (black cardamom) 6-8 loongh (cloves) 4-6 choti elachi (green cardamom) 2 tazpat ka pata (bay leaf) 4-6 kali mirch (whole peppercorns) 1tsp zeera (cumin seeds) Then add 1 medium onion. When onion is golden brown add ginger garlic paste 2tbsp saute a little. Add 1/2 kg chicken then add 5-6 green chillies (lengthwise cut) Add salt and cook. Add 1 medium tomato Add 1/2 bunch each of coriander and mint leaves (hara daniya and podeena) Add 1tbsp sauf 1/2tsp daniya powder 1tsp Garam masala powder Spread 2 sliced tomato on top of chicken. Spread 250 gms yogurt (DO NOT MIX) Add 2tbsp kewra (biryani essence) with a little food color Fill a pot with water (DO NOT BOIL WATER) Add little of whole garam masala (choti elachi/cinnamon sticks/loongh/bayleaf) Add 1/2 kg rice in hot water (DO NOT ADD RICE IN BOILING WATER) Drain water when 3/4 done Spread rice on top of chicken mixture, tomato and yogurt Add 1tsp powder of mace,nutmeg (Jaifil and Javatri) Black and green cardamom (bari and choti elachi) [Take a little of each to make equivalent of 1 tsp] Add a little food color dissolved in kewra or water Place on dum (steam) for 8mins
