Firni

Firni is a special variation of rice pudding. It is hugely popular in India and Pakistan. In Pakistan it is associated to religious festivals. In firni ground rice is used instead of whole rice grain. When you store it for days its surface get dry out and thicken, which gives it super delicious taste. It is silky in texture, usually served chill in individual bowls garnished with almonds.
