Battenberg cake is a light sponge cake covered with marzipan. It displays a very distinctive 2 by 2 check pattern when cut in cross section. Here is an awesome and a very traditional Battenberg cake recipe that is covered with homemade marzipan and almond flavored sponge glued with apricot jam.
