Homemade salad dressings are luxurious as well as healthy, because they are made of fresh ingredients. To keep your wallet under budget prepares salad dressings at home. Homemade salad dressings are simply delicious and more in quantity that we buy from grocery stores. For making salad dressings at home you need a sterilized empty jam jar with a tight top (lid) or a small bottle as shown in the picture.
Here are the few recipes of homemade salad dressings, which you can be stored for small period and enjoy a variety of salads at home.
Mayonnaise: This is widely used in salad dressings, sandwich dressings and many flavourable dips. Preparing and storing of mayonnaise is not difficult. All you need is 1 cup of olive oil, or any good quality cooking oil + 1 egg (full) or 2 egg yolks + 2 tablespoon of vinegar or lemon juice. Beat egg or egg yolks with a rotary beater until slightly thick; add 1 teaspoon oil at a time beating well after each addition, until 1/3 cup has been added. Add a few drops lemon or vinegar. The mixture should be quite thick and perfectly smooth. If it isn't you added the oil too quick or didn't beat it enough. Continue to add the oil and acid alternately until it's used up. Add seasonings to taste. Store covered in the refrigerator.
Creamy Mayo Dressing: This type of salad dressing is used to top fruit based salads, for example apple and pineapple salads with chicken or vegetables. Mix half cup of homemade mayonnaise with 4 tablespoons of heavy cream, add 1 tablespoon of milk if the sauce is too thick, add salt and white pepper to taste. For sweetening this kind of salads usually icing sugar is used, add up to 1 tablespoon of icing sugar.
Italian Salad Dressing: This is used to season the salad with some kinds of pasta red kidney beans, corn, chickpeas, mixed with some seasonal salad veggies. In a salad dressing bottle add 3/4 cup vegetable oil, 1/4 cup vinegar, 2 tablespoons water, 1 teaspoon minced garlic, 2 teaspoons sugar, 1/2 teaspoons salt, 1/4 teaspoon black pepper and 1 teaspoon grated parmesan cheese. Shake the bottle / jar well until you see creamy texture.
Sour Cream: At homemade levels sour cream need 24 hours, so when you are going to make sour cream salads plan ahead. Mix 1 cup of heavy cream with 1/4 cup of buttermilk (buttermilk can also be prepared at home by mixing juice of half lemon in 1 cup room temperature milk, let it stand for 15 minutes and it will be ready for use). Mix heavy cream and sour cream or buttermilk in a screw-top jar, cover, and let stand at room temperature about 24 hours until very thick.
Dressing for Potato Salad: This type of salad is very nutritious for the growing kids and yet very expensive if we buy it from any branded outlets. In a bowl mix half cup of mayonnaise with half cup of sour cream, 1 teaspoon mustard paste, 1 tablespoon of ketchup, 1 1/2 teaspoon of Worcestershire sauce, 1/2 cup minced onions salt and black pepper to taste. Refrigerate until ready to toss with potatoes.
French Salad Dressing: French salad dressing can be prepared at home with very simple recipe and readily available ingredients. In a salad dressing jar take 2 tablespoons of vinegar/fresh lemon juice with 1 cup of olive oil, 1 teaspoon paprika powder, 1 teaspoon salt, 1 teaspoon freshly crushed black pepper, 1 tablespoon of ketchup and 1 teaspoon of sugar (optional). Combine all ingredients, shake or beat until thoroughly combined. Chill and shake well before using.
Thousand Island Dressing: Thousand island dressing is used in variety of foods as in burgers, as dips or salads. The most common and loveable salad dressing all over the world is Thousand Island dressing. Mix 1 cup mayonnaise with 1/4 cup ketchup, 1 tablespoon vinegar, salt and pepper to taste, 1/2 small onion finely chopped, 1 hard boiled egg chopped, 1 small green bell pepper, finely chopped and 2 tablespoons pickled cucumbers chopped, chilli sauce 1 teaspoon. Mix well and chill. Use to top up red kidney beans, corn, chickpea based salads, variety of sandwiches and burgers. Taste for seasoning and add more salt and pepper, if you like.
