  • (Healthy Breakfast Recipe)

  • Servings: 6

  • Ingredients:

  • Eggs 6, scrambled
    Water 1 tsp
    Baby spinach 1 cup
    Red bell-pepper 1/8 cup (diced)
    Whole wheat pieces of toast 6

  • Cooking Directions:

  • 1- Take a muffin tray and grease it.

  • 2- Preheat oven to 350F degrees.

  • 3- In a bowl, add water and eggs and scramble.

  • 4- Add layers the spinach and red peper in the muffin tray.

  • 5- Now pour the scrambled egg evenly in all cups and fill them up to 2/3 of cups.

  • 6- Bake it for 20-22 minutes in the preheated oven till centers are cooked thoroughly.

  • 7- Take a toast a piece of whole wheat bread.

  • 8- With the help of cookie cutter, cut out circles from it.

  • Note: You can freeze them by wrapping them into foil and fr thaw re-heat them in microwave oven for 50-80 seconds.
