Almond Crust Tart Filled with Carrot Pudding
Tart is one of famous food that is stuff with different filling. In this recipe I used almond flour for tarts and carrot pudding to fill the tarts. Using some different ingredients gives an amazing taste to these stuffed tarts.

  • For Crust:

  • Almond flour 1 cup

  • Salt 1/8 tsp

  • Baking soda 1/8 tsp

  • Honey 3 tbsp

  • Butter 2 tbsp (melted)

  • Egg 1

  • For Carrot Pudding:

  • Carrot 1 kg (grated)

  • Mix dry fruit ½ cup (almond, pistachio etc)

  • Green cardamom 4

  • Milk solid ½ cup

  • Sugar 1-1/2 cups

  • Toned milk 500ml

  • Clarified butter ½ cup

  • For Cream Cheese Frosting

  • Cream cheese 4 tsp

  • Sugar 1 tsp

  • For Crust:

  • Pre heat the oven to 180 degree C. Grease muffin pans.

  • Sift the almond flour, salt and baking soda in a bowl.

  • Make a well in the center and add the butter, honey and egg. Fold gently with a spoon.

  • Knead it until form smooth dough. Wrap the dough with cling film for 2-24 hours.

  • Roll the almond dough between the sheets of cling film.

  • Cut out six to eight tarts of 3 cm with the help of a cookie cutter.

  • Carefully place them in the muffin pan and press at the bottom and sides of the pan. Refrigerate for 30 minutes.

  • Take out the from the fridge and bake them in the oven for 10 minutes or until browned.

  • Allow to cool on a wire rack. Fill the tarts with the warm carrot pudding.

  • Top it with cream cheese frosting. Serve the tarts warm.

  • For Carrot Pudding:

  • Add toned milk in a heavy bottom pan and allow boiling. When starts boiling reduce the heat and add carrots.

  • Stirring it continuously until milk evaporates.

  • Heat half clarified butter in a non-stick frying pan and sizzle cardamoms. As the aroma starts, add in the carrots and fry it for few minutes.

  • Now add milk solid and sugar, stir it continuously until mix well.

  • Add remaining butter and dry fruit, mix gently and remove from heat.

  • For Cream Cheese Frosting:

  • Mix cream cheese and sugar.

  1. What can we use instead of egg ( we r pure veg n dont cook eggs at home) what binder (milk/water) hot/cold can be used so that the tart shells dont go bad for a couple of days? As i want to use this for gifting...Thx

  2. Dear Users, Here is homemade Almond Flour Recipe. Measure 1 cup almonds. Place almonds into your blender. Secure the blender lid and place tamper inside blender. Turn blender on high for 7 seconds, done.
