  • Cottage cheese or paneer as it is known in Urdu, is an oft underrated source of nutrition, which provides much food value with few calories. Cottage cheese is a cheese curd product, which contains the nutritional benefits of other cheeses, but without the calories. Although it does not look particularly prepossessing and its bland taste may put people off, it is a versatile food that can be eaten on its own or used in various savory and sweet recipes that disguise its taste.

  • Dairy food is often avoided by people who are limiting their calorie intake because it is thought to have a high fat content. However cottage cheese is low in fat and carbohydrates and very high in protein and contains calcium, iron and vitamin D, A4 oz serving has approximately 120 calories, 5g fat (3g saturated), 3g carbohydrates, 77mg calcium and 14g protein. It also contains approximately 500mg sodium and 20 mg cholesterol. Furthermore, it has a high content of casein protein, which makes it popular with bodybuilders. It is promoted as a diet food because of its low fat and carbohydrate content. In addition, it can prevent stomach disorders and help strengthen the bones, especially for older women.

As a result, it keeps your stomach full for a longer time and helps you resist the temptation to snack before the next meal.     Heat 1 pint milk till it reaches a boil. Add a little lemon juice (approximately 1 tablespoon) and wait till it curdles and separates. Take it off the fire and strain it through a cloth. Hang insinde the cloth till the water drains through and it reaches the desired consistency.

  • If you purchase the commercial variety of cottage cheese, you can alter its consistency to make it more creamy by crumbling it in a bowl and adding either fresh cream or sour cream until it reaches the desired consistency. In the order that they are listed-start with the eggs, next add the cottage cheese, then the banana (if you are including it) next the sugar or honey, and finally the oatmeal.
