Eggs are one of the versatile item that we can utilize in different ways. Sometimes really simple ingredients makes a delicious food just like these Egg Muffins. Egg Muffins has a fabulous taste when combined with chicken, capsicum and carrot. A must try recipe.

  • Ingredients

  • Eggs 6
    Milk ¼ cup
    Cooked chicken 1/2 cup
    Capsicum ½ cup (cubed)
    Carrot ½ cup (cubed)
    Salt and black pepper to taste
    Cheese as required (grated, optional)

  • Step by Step Directions

  • Spray a muffin/cupcake pan with oil.
    Mix eggs, milk, salt and black pepper in a bowl.
    Put chicken, capsicum and carrot in muffin cups.

  • Pour egg mixture in each muffin cup.
    Sprinkle cheese and bake at 200 degree C for 20 minutes or until egg cook.

  • Cool before removing from pan.
    Note: You can store them in your fridge for up to 3-4 days. Warm in microwave and eat.

  1. Yep..I tried the recipe today. I was wondering how would it turn out and how would it taste.. Well it turned out good. I would say an egg lover would definitely love these muffins..like I did. They tasted like scrabbled eggs.. but the good part was that these were baked. I even skipped the greasing part as I have a non stick muffin tray.. so im loving the fact that I can also enjoy eggs without using oil to cook which is a good part for calorie concious and weight concious ppl like me.
