Think something other then meat and create a nice combination of rice with vegetables. Customize this recipe according to your taste. Serve delicious vegetable pulao with raita or any gravy.

  • There are many ways to make pulao according to demand of family and taste. Mostly we prefer pulao with meat, but if you will taste this recipe that is about vegetable pulao, you will surly like this flavor of pulao as well. A simple, tasty and quick rice dish.

  • Ingredients

  • Rice 2 cups (boiled)
    Ghee 2 tbsp
    Onion 1 (thinly sliced)
    Cinnamon 1 stick
    Cloves 4
    Green cardamom 4 (lightly crushed)
    Cumin seeds ½ tsp
    Garlic 1 tsp (minced)
    Carrot 2 (shredded)
    Beans 10-12 (shredded)
    Capsicum 1 (thinly sliced)
    Green chilies 4 (slit)
    Salt to taste
    Coriander leaves for garnish

  • Method

  • 1- Heat ghee in a pan and stir fry onion.

  • 2- When it starts to light brown add cinnamon, cloves, cardamom and cumin. Stir fry until onion get a dark brown color.

  • 3- Now add garlic and fry for few seconds.

  • 4- Add all vegetables and mix. Put in salt; cover and cook on slow heat until vegetables are soft.

  • 5- Shift rice in the pan and mix gently.

  • 6- Dish out and garnish with green coriander.

  • Note: Store left vegetable pulao in an air tight bowl and refrigerate 3-4 days.
    You can add other vegetables as well.
