  • Ingredients

  • Green ice cream/ banana or pistachio 1 liter
    White ice cream/ vanilla 2 cups
    Pink ice cream/ strawberry 1 liter
    Mini chocolate chips ¼ cup

  • Method

  • Line the bottom of a spring form pan with parchment paper or wax paper. It will help to remove cake easily when it’s done.

  • Step 1: For the Green/Rind Layer

  • Soften green ice cream.
    Take small scoops of the ice cream and arrange in a ring around the outside of the pan. Take a spatula and smooth ice cream to form it into a ‘rind,’ about 1″ wide by 2″ tall. If the ice cream starting to melt, keep the pan in the freezer for 10-15 minutes to allow it to firm up, and then continue reshaping. When you make perfect rind, put back in the freezer and allow hardening completely.

  • Step 2: For the White Layer

  • Slightly soften green ice cream.  
    Repeat the process that you did with the green layer, except make it thinner, about 1/2″ wide. Again, if the ice cream starting to melt, keep the pan in the freezer for 10-15 minutes to allow it to firm up, and then continue reshaping. Once it’s in a nice shape, put in freezer until hardened completely.

  • Step 3: For the Pink Watermelon Middle

  • Allow the pink ice cream to soften.
    Transfer it to a medium bowl and stir in the chocolate chips (reserve 1 tbsp).
    Spoon the mixture evenly into the middle of the already prepared “watermelon rind.”
    Top with the reserved chocolate chips and return to the freezer until fully re-frozen.

  • Step 4: Ready to Enjoy

  • When ready to serve, take out from the spring form pan, cut into watermelon wedges and enjoy!
